Pooran Poli

 Puran Poli, also known as Holige or Obbattu, is a popular sweet flatbread that is commonly made in Maharashtra, Karnataka, and other parts of India during festive occasions or special celebrations. It is made by stuffing a sweet lentil filling inside a dough made with wheat flour or all-purpose flour. Here's a traditional recipe for making Puran Poli at home:


For the Puran (Sweet Lentil Filling):


Ingredients:


1 cup chana dal (split Bengal gram)

1 cup jaggery, grated or powdered

1/2 tsp cardamom powder

A pinch of nutmeg powder (optional)

2 tbsp ghee (clarified butter)

Water, as needed

Instructions:


Wash the chana dal thoroughly and soak it in enough water for at least 2 hours.


Drain the water and transfer the soaked chana dal to a pressure cooker. Add fresh water to cover the dal and pressure cook for 3-4 whistles or until the dal is soft and cooked through.


Once the pressure is released, open the cooker and drain any excess water from the cooked dal.


Transfer the cooked dal to a pan and add grated or powdered jaggery. Cook on low heat, stirring continuously until the jaggery melts and the mixture thickens.


Add cardamom powder, nutmeg powder (if using), and ghee. Mix well and continue to cook for a few more minutes until the mixture comes together like a thick paste.


Remove from heat and let the Puran filling cool down completely.


For the Poli (Sweet Flatbread):


Ingredients:


1 cup wheat flour or all-purpose flour

1/4 tsp turmeric powder

1/4 tsp salt

2 tbsp oil or ghee

Water, as needed

Instructions:


In a mixing bowl, combine wheat flour or all-purpose flour, turmeric powder, salt, and oil or ghee. Mix well.


Add water gradually and knead the dough to a smooth and soft consistency.


Cover the dough with a damp cloth and let it rest for 30 minutes.


To make Puran Poli:


Divide the dough into small balls and the Puran filling into slightly smaller balls.


Take a dough ball and roll it into a small circle using a rolling pin.


Place a Puran ball in the center of the dough circle and gather the edges to seal it, forming a stuffed ball.


Flatten the stuffed ball gently with your fingers or a rolling pin to form a round disc.


Heat a griddle or tawa over medium heat and place the Puran Poli on it.


Cook on both sides, applying ghee or oil, until golden brown spots appear and the Poli is cooked through.


Repeat the process with the remaining dough and filling to make more Puran Polis.


Serve hot with ghee, milk, or yogurt for a delicious and festive treat!
