Poha

 Poha, also known as flattened rice or beaten rice, is a popular breakfast dish in Maharashtra and other parts of India. It is made from rice that has been parboiled, flattened, and dried, and then used to make a variety of dishes. Here's a simple recipe for making Poha:

Ingredients:

  • 2 cups Poha (flattened rice)
  • 1 medium-sized onion, finely chopped
  • 1 small potato, peeled and cubed
  • 1/2 cup frozen green peas (optional)
  • 1/4 cup peanuts
  • 1-2 green chilies, finely chopped
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • A pinch of asafoetida (hing)
  • 8-10 curry leaves
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. Rinse the Poha under cold water in a sieve to remove any impurities. Drain and set aside.

  2. Heat oil in a pan or kadhai over medium heat.

  3. Add mustard seeds and cumin seeds. Once they start to crackle, add asafoetida, curry leaves, and chopped green chilies. Saute for a minute.

  4. Add chopped onions and sauté until they turn translucent.

  5. Add cubed potatoes and frozen green peas (if using). Mix well.

  6. Add turmeric powder, red chili powder, and salt. Stir to coat the vegetables evenly.

  7. Add the rinsed and drained Poha to the pan. Gently mix everything together, taking care not to break the Poha.

  8. Cover the pan and let the Poha cook on low heat for 5-7 minutes, stirring occasionally, until the potatoes are cooked through.

  9. In a separate pan, dry roast the peanuts until they turn crispy and lightly golden.

  10. Add the roasted peanuts to the Poha and mix well.

  11. Garnish with fresh coriander leaves.

  12. Serve hot with lemon wedges on the side for squeezing over the Poha for an extra tangy flavor.
